I've also noticed that each time I run sudo pistar-update, the dashboard language is being reset to “english_uk” which causes the timestamps shown on the dashboard to be in UTC instead of the local time zone.

Try setting up again with the latest Pi-Star image using a new, brand name, high endurance microSD card. I've had several hotspots misbehave or cease working altogether due to microSD failures (corruption). Even though I use only high quality name brand cards, they have a finite life and eventually ...

4.2.0 beta seems to be running (and updated) just fine on a Raspberry Pi Zero W Rev 1.1 with an old Zumspot Mini (no OLED).
