Not do do with pi-star directly but, All pi-star modes need internetr as that is how it connects to reflectors and rooms and talkgroups. But in DMR anyways there is a 'local' Talkgroup (usually TG 9) but have any of you tried the "simplex" way on your repeater channel? -- This assumes batt...

Change your network 3 to network 4

Network 3 is the DMR2XXX crossover mode -- it will revert to disabled as it is reading the crossover state(s)

I use Win32DiskImager on my windows 10 but there is Balena ETcher that does the same thing -- many say to use that. Never worked right for me on Win10 But in Mint, it may work. Just look through your Package Manager for it or google Balena Etcher and go to their website to get help using that.
