I am using PiOw with a Chinese made mmdvm It could be the RPi can't handle serial speeds higher than 115200 baud. I don't know which version of firmware you are on and if you are using the latest which increases the speed 4 times to 460800. I would try to either build a custom firmware with the spe...

I just want to add, that once the two hotspots are up and running, they will work the whole day sans any issues what-so-ever

What firmware version are you running, and which hat do you have?

I am using PiOw with a Chinese made mmdvm

I guess I had better buy a new mmdvm hat at some point or another?

I do not keep my hotspots switched ON 24/7 as we are having very bad weather and have heavy lightening at times during the night. Raspberry Pi's are so cheap that if anything should happen, just buy a new one, its not like its a 5000 dollar custom computer. I really wish that was possible. Right no...

Finally decided to write a new SD card from scratch without restoring the configuration file from the day before.

So far the problem appears to be resolved.
