Prob. not as pistar is configured to run the OS in a read only environment. Your additional software will prob. suffer when modified to run RO, if it'll run that way at all?

I have no knowledge of Mac hardware. You can USB tether to an android / iphone then using its WiFi connect to and except the terms of service from the venue. Pistar was written around MMDVM at its heart. MMDVM was created for use with digital voice modes with no support for using analogue based systems.
There are a ga-zillion all-star images available on the net, too my knowledge non of them use MMDVM type hardware.

There are a couple of things to ensure are enabled within the radio to work correctly with the pi-star image with DSTAR mode. The only time hotspots need a different ID is if you run more than one.. IE: My home hotspot is myid01, and my mobile that I take to work is myid02.. and my radios use myid (no ssid) Where do you change the id's On the pistar config page. Unlike ref reflector's that use DPlus, XRF reflectors that use DExtra or DCS reflectors that use, well DCS an XLX reflector can use any of the three protocols listed here.
