It would be easier to change the frequency in the hotspot to match the frequency your radio is using. That can be done in the pi-star configuration.

Why don't you make the home and travel router have the same ssid and password. They would never be on at the same time or location and this would allow you to have only 2 wifi connections in your pistar.

Have you downloaded the live logs file and looked at it to see what the system had to say about the wifi startup?

Toshen is correct. I run Pi-Star vn4 rc3 on a RPI 3b+ and have no issue connecting to my 5ghz router.

If this happens one of the pi-star scripts did not finish or hangs, causing the remount to malfunction.
Try to remount all:
After that you should be able to "rpi-ro" and "rpi-rw" again.
