It isn't working with the IC-705 in terminal mode at the moment.
I have entered the IP of the Pi-Star install, and tried to transmit on every conceivable callsign I can think of (CQ, gateway, etc) and nothing shows up on Pi-Star, and the IC-705 returns the error with little red 'x'.
My OpenSpot3 can connect with no problem, and it is listed on the admin page of Pi-Star as an incoming connection right below the outgoing reflector connection.
I only mentioned this possible method as it seems more attainable than the Bluetooth serial idea.

and to your point I know there are XLX gateways out there that you can connect to via the IC-705 so perhaps it’s listening on different ports or something along those lines.

Icom's G3 gateway is the protocol used by Terminal Mode, and has been adapted for XLX.
According to the Icom, the ports used are:
