Check when the last time you updated safari on the iPad was, I'll bet it was recently.

New iOS came out towards the end of April, apparently iOS 14.7 is due soon too.

Each one of these will have unspecified changes to Safari but there could be something to tell you what changed in the release notes.

I think you can now run other browsers under iOS, but as ever Apple make it as difficult as they can to do that sort of thing.
