Wish granted - the move to DVRef allows for hostnames now - but I can't stress enough that this is a bad idea.

You can change that, look in /etc/ysfgateway:

Sorry for coming to the party late, yes I was just talking to DVRef and G4KLX about exactly this, G4KLX pointed me in the correct place and we already have the file fixed up for you all, plus a new YSFGateway build for 4.3.x users too.

In the same way the RX offset needs tuning, the TX offset does too... it's also not always the same value as the RX offset.

No need to do any of that, the DAPNet group have an API you can use directly, don't even need to use Pi-Star at all...

If you plan to update the screen config (HMI / TFT file on the Nextion display) often, I'd use USB, if you don't plan to do that - I'd use the modem connection, usually makes for a more compact setup.
