Hello,
I wanted to know if I can compile pistar and its related software on a custom image my self? I have found I believe 2 different repos with Binaries, the front end, etc. Yes I know there is images available for downloading but I am working on another project and if possible would like to use the pi-gen repo to have a step to build the pistar and then will build other things after.
Any help is greatly appreciated!

Nothing is impossible to actually say no, but some things are just simpler.
Can be done, but it won't be easy to do unless you have an above average understanding of ur Linux OS also remember what you end up with will not be pistar. It will only resemble pistar and if we make changes ur install might no longer work or something within will break.
No support can be given, meaning it'll all be on you to make it work out.
The simplist thing to do... dedicate a mid range pi (like a zero 2w, pi 3A+, pi 3b+) as a single purposeful device, keeping ur other Pi's for ur other projects.

Yea, I understand it's simpler to download the given image and then from there build what I want on top. Sure, you can have multiple pis but I find it a waste.I already have downloaded the image, did what I wanted to and it works. I would just like to have the ability when as you said new updates release that I can rebuild the image for use if needed. Just wanted to know where I can officially get the correct files to do the build.
